Quick & Easy Vegetable Shepherd's Pie

Prep time: 10-15 min.      Cook Time: 20-25 min.       Total Time: 40 min.

Ingredients

1/2 Shredded Mozzarella (optional - or vegan cheese)
4 Large Potatoes, Peeled & Cubed
2 TBSP Butter (vegan butter)
TSP Salt

2 TBSP Olive Oil
1 Cup Mushrooms (optional)
1/2 Cup Minced Onions (optional)
1 Garlic Clove Minced
1/2 Can Black Beans
1 Can Lentils
1/2 Can Corn
1/2 Can Peas & Carrots

Cooking Instructions

Preheat oven to 375 degrees. Boil water for potatoes. While waiting for water to boil, saute mushrooms and onions in olive oil in a medium sauce pan. Boil potatoes until soft, mash with butter and salt until smooth. No clumps! If you like garlic and cheese, you can add garlic and shredded cheese (or ricotta) to your mashed potatoes for extra flavor.

Add minced garlic, black beans, lentils, corn, peas and carrots to the sauteed mushrooms and onions. Cook on medium for 5 - 7 minutes with the mushrooms/onions.

The vegetable mix is the base of your pie, to be placed first in the casserole dish, creating a thick, even layer. Next, create a layer with your mash potatoes, creating an even, thick layer. Top with shredded mozzarella.

Bake on 375 degrees for 15 - 20 minutes until slightly golden on the top.

You go here for the incredible wine, spirits, & beer selection. You go to the bar for drinks from the very knowledgable bartenders. Table service was lacking but the extensive drink list compensates. The quaint atmosphere make this a nice place to visit with friends for drinks and a different dining experience.

The Standard | Elgin St., Ottawa

I thoroughly enjoy this place. The atmosphere is neat - a great place to lounge  and enjoy drinks with friends. A great surprise is that the food is also really good and fairly priced - you've got to try the pizza. 
An added bonus is the drink specials - jack and jäger are often on sale for $4 - and there are always DJs at night that have a good handle for what they're doing.

Cafe Indochine | Clarence St, Ottawa

Quaint, intimate, cozy spot to get some quality homemade Vietnamese food.
Perfect date spot.
Their vegetarian dishes are great!
Very nice owner who also doubles as the chef.
make resos as it is a small place.
Service is laid back and pleasant - but the food is worth the wait - other review saying food is bland must not be familiar with the cuisine because I've never found this to be true.
Slightly more on the costly side (not in comparison to most restos in the Byward market though) but the food is so fresh - clearly made when I ordered it - so it's all worth it!

Definitely recommend trying this spot!

Apsara Angkor | 189 Ontario St., Kingston, ON

I have been to this restaurants a few times now and have been happy each time. I love to frequent Thai food places and I absolutely love this place. The service, the food, the prices, and the atmosphere are all great! You can taste how fresh the ingredients are. The service staff are incredible friendly and efficient, providing great service.

I especially love the $10 lunch specials - they are good portions and come with soup and a spring roll - I have yet to be disappointed!

The Works | Princess Street, Kingston, ON

While strolling around the hub we decided to grad a burger at The Works because we knew the franchise from living in Ottawa and assumed it to be a safe bet for good food and satisfactory service.

We ordered drinks and an appetizer from our server. Another server later came to take our meal order and we each ordered a burger. Our food took 45+ minutes to arrive and we never received the appetizer we had ordered. Once our burgers had arrived, I asked the server if she could check with the kitchen to see how long out appetizer would be. She told us that she didn't know we had ordered an appetizer, to which I told her the original server had taken our original drink and app order. She said that she would go and check with the kitchen. She never came back to the table and avoided acknowledging us throughout our meal. Our burgers were over salted and definitely not the quality we had experienced in Ottawa.

After finishing our meal we had to wait a while (jackets on, plates stacked, etc.) and had to ask for our bill. She never acknowledged the fact that we hadn't received all that we had ordered. Unfortunately this was a super easy fix, something that could have been prevented with some training. As well, with a present managerial staff overseeing quality of food and service, situations like this can be very easily rectified ensuring happy customers and some return business... possibly even a great review.

The character of this place comes through in the voice that resonates throughout the menu, which offers a variety of pub food that has been slightly elevated and packed with flavor.
I have visited twice and both time received great service.
The food and service will keep me loyal and happy to recommend.
The interior could definitely use an update (as well as the washrooms).
